I’ll make this short and sweet. I think muffins are a waste of time. Muffins, or as I call them, “unfrosted cupcakes” laugh in the face of my normal protein packed breakfasts of meats and eggs. I normally wouldn’t be seen nibbling on a muffin in between sips of my black coffee until I came up with this powerful recipe. Power muffins! So, I still wouldn’t eat a muffin for breakfast unless they are packed with protein, antioxidant rich berries and are ready for me to take on the go before I crush a workout, drop the kiddo off at school, then hit some trails for my cardio. Low in calories and high in protein, these quickly will become a favorite for your breakfast on the go, whenever you aren’t eating all the eggs and meat instead.
2 cups Kodiak Cakes “Power Cakes” Flapjack Mix
1 scoop vanilla protein powder
1/2 cup brown sugar
1 cup whole milk
1 cup fresh blueberries
Mix all ingredients together in a bowl except the blueberries until smooth. Gently mix the berries into batter. Fill greased muffin tins 3/4 of the way. Bake at 350 degrees for fifteen minutes or until nice and golden on the top.
Serve with a hearty slice of your favorite grass fed butter on top, on the sides, inside, and everywhere appropriate.
Makes 12 muffins. 126 calories per muffin/ 7.25 grams protein.
